Job Description:
• Plan, organize, direct, control and evaluate daily baking operations
• Ensure health and safety regulations are followed: Follow OH&S and Company standards, assisting BM with completion and maintenance of OH&S records
• Ensure that adequate ingredients are ordered to meet production needs
• Set staff work schedules and monitor staff performance
• Develop production schedule and ensure successful daily implementation
• Recruit, train and supervise staff: Train staff according to COBS Bread standards and procedures (Ensure that all production staff have appropriate induction and training, in particular Breaducate induction modules).
• Conduct performance reviews: Ensure that the highest quality product is produced in a timely manner
• Organize and maintain inventory to ensure that profitability is maximized
• Participate in all Bread Competitions within Toronto with a minimum average score of 70%
• Manage and lead production staff to ensure that business objectives are met
• Demonstrate and inspire passion for highest quality product at all times
• Conduct regular Bread Checks
• Participate in all Baking Days
• Ensure that wage targets are met for production team
• Liaise with sales staff/manager regarding customer feedback, production levels and other bakery initiatives
• Discard and record below standard doughs
• Ensure that all new promotion ingredients are ordered in a timely manner
• Complete monthly inventory and input on stock take sheet
• Complete daily production sheets to ensure that production levels are at optimum levels
• Ensure that all production staff are progressing through COBS Bread Bakers Training Levels
• Manage performance of all staff, including motivating and inspiring staff to achieve results as well as managing and coaching underperforming staff members by implementing Performance Enhancement Plans where necessary.
• Liaise with other managers and inform team members of potential hazards and near miss incidents to improve safety within the bakery
• Create a healthy and safe work environment in the bakery by proactively rectifying potential hazards
• Review Five Star results with BM and implement corrective plans
• Maintain the production environment at a minimum of 4 star standard at all times.
• Follow the Food Safety Program (FSP) and cleaning schedule
• Maintain cleaning records and complete audits as required
• Adhere to DMS standards and record keeping
• Adhere to all COBS Bread standards and procedures

Requirements:
-Completion of a college program in culinary arts, or other program related to hospitality or food and beverage service.
-A minimum of 1 year of retail bakery experience AND a minimum of 1 year of supervisory experience is required.
-Complete operational knowledge COBS recipes, products and baking procedures
-Complete knowledge of COBS Food Safety Program and OH&S requirements.
-Computer literacy in Work and Excel
Work Conditions and Physical Capabilities: Fast-paced environment, Work under pressure, Attention to detail, Handling heavy loads, able to carry 20 kg up and down stairs, able to load bread tins in top ovens (up to 4 kg per tin and 180 cm high)

Weight Handling: Up to 23 kg.
Ability to Supervise: 5-10 people
Salary: $20.00 to $22.00 hourly, 42.5 hours per week
Benefits: Disability insurance, dental insurance and extended medical insurance are provided, we offer free food (up to $15.00 per shift) and performance bonuses. Constant training will be provided to increase performance and productivity.
Important information: Regular schedule includes 5 days per week, from 11 pm to 8 am, night time. (It includes an unpaid break of 30 minutes). Weekends and public holiday work is required. Overtime might be required depending on the business’ needs. Flexibility in schedule is required.
